Baked Pesto Chicken

This is a simple recipe, and it tastes so good!  All you need for this easy dish is chicken breast, pesto, tomatoes, and cheese.  We ate the finished chicken as a sandwich, but it would also taste delicious on a serving of pasta tossed with some pesto sauce.

Baked Pesto Chicken

4 Chicken Breasts

Pesto 

2 Tomatoes

Cheese

Preheat oven to 350 degrees.  Cut chicken in half to make each piece thinner, you’ll end up with 8 pieces of chicken.  Place chicken in pan & layer with pesto sauce.  Bake for 20 minutes.  Remove from oven.  Place one tomato slice on each piece of chicken. Cover with cheese. I used shredded cheddar and monterey jack because that’s all I had on hand.  I think it would taste really good with mozzarella.  Put back in oven and bake for 5 more minutes.

ENJOY!!

    This might be the best, easiest chicken recipe I’ve ever seen! Most people over do it – I prefer recipes like this – straight forward and simple. 🙂

    This looks very appetizing, I would just slap it between two pieces of bread, or two buns and eat it as a sandwich. Thank you for sharing this recipe.
