I’ve been wanting to make a dessert using pumpkin. Being that it’s Fall, Pumpkin desserts seem to be pretty popular lately. Rather than following a recipe, I tried making my own, and they came out quite well! Since it was my very first time making this recipe, I had no idea how it would turn out. For my first batch, I just dropped the dough onto the pan and baked for 10 minutes. It tasted good, but I wasn’t satisfied with how they looked. This dough doesn’t really spread, it keeps it shape, so however you place it on the pan, that is pretty much what it will look like when it’s done baking. So, for my second batch, I decided to roll the dough into balls. They didn’t look bad, and I would make them that way again, but I decided to try one more time. For my third batch, I quickly formed what looked like cookie dough patties. In the end, I thought the patty method turned out the best. However, you can make them any way you like!
Pumpkin Oatmeal Chocolate Chip Cookies
4 c. Flour
2 c. Brown Sugar
1 c. Oil
3 tsp. milk
2 eggs
15 oz. Canned Pumpkin
3 tsp. vanilla
3 tsp. cinnamon
4 tsp. Baking Powder
2 tsp. Baking Soda
1 c. Oatmeal – Quick Cooking Oats
3 c. Chocolate Chips(it was very chocolaty, you may want to lessen it to 2 c.)
Pre-Heat oven to 375 degrees
Combine sugar and oil
add eggs, vanilla, pumpkin & milk
Blend well
Add dry ingredients
Mix, just until ingredients are incorporated
Add chocolate chips
Bake for 8-10 minutes

I have never thought about using Pumpkin in Chocolate chip cookies. But I think that these are awesome cookies to make and they are healthy! These are good with a cold glass of milk.
